Old-fashioned Banana Puddin' with Meringue


1 Cup sugar
2/3 Cup flour
2 dashes of salt
8 egg yolks, beaten
4 cups milk
1 tsp. vanilla extract
Vanilla Wafers
7 or 8 large bananas (sliced)
8 egg whites & 1/2 Cup Sugar, add cream of tartar for stiffer peaks


Combine 1 cup sugar, flour, & salt in top of double boiler & mix well.

Add the egg yolks and milk until thoroughly combined.

Cook over boiling water until pudding thickens, stirring constantly.

Reduce the heat and cook for about 5 more minutes. Stirring frequently.

Remove from the heat & stir in vanilla.

Spread a small amount of pudding in the bottom of a baking dish. Add layers of wafers, banana slices and pudding.

Don't forget to leave room for the meringue.

Beat the egg whites until stiff peaks form, adding sugar & cream of tartar gradually. Beat constantly until very stiff peaks form.

Spread over the pudding, sealing with wafers around the edge.

Bake at 400 degrees until golden brown. (5-10 min) Serve & enjoy! Always remember to make it with love :)

**Hint: Sprinkle bananas lightly with sugar to keep them from darkening!
