Fish Tacos with Mango Salsa
1 Mango (diced)
1 Small Avocado (diced)
1 Cup Pineapple (diced)
1 Small Serrano Pepper (diced)
1 Tbsp Lime Juice
1 Tbsp Cilantro (chopped, more/less to taste)
Salt and Pepper (to taste)
1 Pound fish, such as Flounder, Cod, Mahi Mahi, Grouper, Tilapia, Etc.
1/2 Cup Flour
1 Tbsp Taco Seasoning
Salt and pepper (to taste)
Mix all ingredients together. Set aside
Lightly fry corn tortillas until golden brown, but not cruncy. Set Aside.
Mix together flour, taco seasoning and salt.
Dredge each fillet in flour mixture.
Heat 2 tbsp olive oil.
Fry fish in hot oil, about 3-5 minutes. Flip and continue cooking until done.
Combine all on corn tortillas. Can add things like cabbage slaw, sour cream, etc.
