Deconstructed Mexican Fried Ice Cream

Ingredients

Cornflake Brittle (Recipe Follows)
French Vanilla Ice Cream
Cinnamon Sugar (to taste, garnish)
Honey (garnish)
Cornflakes (garnish)

Cornflake Brittle

2 Cups Crushed Cornflakes
2 Tsp Honey
2 Tsp Light Corn Syrup
1 Tsp Cinnamon
2 Tbsp Sugar

Directions

Coat rim of glass in honey. Dip the sticky rim in cinnamon sugar.

Crush up plain cornflakes for the bottom of the cup.

Place scoop of ice cream on top of cornflakes.

Place Cornflake Brittle standing in ice cream.

Sprinkle with cinnamon sugar, to taste.


Cornflake Brittle

Preheat oven to 350 degress. Grease flat sheet.

Combine honey, corn syrup, cinnamon and sugar in a microwavable bowl. Microwave for 30 seconds.
Add crushed cornflakes and mix together.
Spread mixture flat onto sheet pan. Pop in the oven for 5 minutes.
Take sheet pan out and pop it into the freezer until hardened.
