Hummingbird Cake

Ingredients

Cake



  • 2 cups self-rising flour
  • 1 cup plain flour
  • 2 cups sugar,
  • 1 tsp. cinnamon
  • 3 eggs, beaten
  • 1 1/2 tsp. Vanilla
  • 1 (8 oz.) can crushed pineapple
  • 1 3/4 cup mashed bananas
  • 1 1/2 cup chopped pecans
  • 3/4 cup vegetable oil

    Cream Cheese Frosting


  • 1/2 cup soft margarine
  • 1 (16 oz.) box powdered sugar
  • 1 tsp. Vanilla flavoring
  • 1 (8 oz.) cream cheese, softened
  • 1/3 chopped pecans

    Directions

    Cake


    1. Combine beaten eggs and sugar: stir until smooth. Add oil, flour, vanilla flavoring and cinnamon: blend well. Then add pineapple, bananas and pecans.



    2. Pour into greased cake pans and bake at 350 degrees until done.



    Frosting


    1. Cream margarine and cream cheese.



    2. Add powdered sugar and beat until light an fluffy. Stir in vanilla flavoring and pecans.



    3. Spread on cooled cake.
