Italian Cream Cake

Ingredients

Cake



  • 1 stick margarine
  • 2 cups sugar
  • 5 egg yolks (save whites)
  • 3/4 cup flaked coconut
  • 1/2 cup vegetable oil
  • 2 cups self-rising flour
  • 1 tbsp. Vanilla flavoring
  • 1 cup chopped pecans
  • 1 cup buttermilk

    Frosting



  • 1 tsp. Vanilla flavoring
  • 1 stick margarine
  • 1/2 cup chopped pecans
  • 1 (8 oz.) cream cheese, softened
  • 1 (16 oz) box powdered sugar

    Directions

    Cake



    1. In a large bowl, cream margarine and oil. Add sugar and beat well. Add egg yolks and blend well.



    2. Add flour alternately with buttermilk Add vanilla flavoring, coconut and pecans: blend well. Beat egg whites until stiff.



    3. Fold into cake mixture. Pour into greased cake pans and bake at 350 degrees until done.



    Frosting



    1. Cream margarine and cream cheese.



    2. Add powdered sugar and blend well.



    3. Add vanilla flavoring and chopped pecans; blend well. Spread on cooled cake.
