Marinade for Seafood With Morel Sauce

Ingredients

Marinade



  • Fish of choice
  • 4 oz. water
  • 4 oz. olive oil
  • 2 Tbsp. old bay
  • 1 tsp. salt
  • 1/2 tsp. black pepper
  • 2 Tbsp. soy sauce
  • 2 Tbsp. brown sugar
  • 1/2 tsp. granulated garlic



    Fresh Morel Mushroom Sauce



  • 2 oz. butter
  • 1 onion, Julianned
  • 6 medium morels, whole, or domestic mushrooms, sliced
  • 2 ramps, diced
  • 1 medium tomato, diced
  • Salt and pepper to taste
  • 1/2 cup white wine
  • Diced parsley

    Directions

    1. Blend all marinade ingredients well.



    2. Let fish marinade 6 to 8 hours for best flavoring.



    3. Cook on medium low fire, approximately 3-4 minutes on each side, basting with pastry brush frequently.



    4. To make mushroom sauce, heat butter on medium high heat. Add onion and saute for 2-3 minutes. Add mushrooms and saute for 1 minute. Add ramps and tomato and saute for 1 minute. Add white wine, reduce by half.



    5. Add parsley atop seafood.
