6 medium morels, whole, or domestic mushrooms, sliced
2 ramps, diced
1 medium tomato, diced
Salt and pepper to taste
1/2 cup white wine
1. Blend all marinade ingredients well.
2. Let fish marinade 6 to 8 hours for best flavoring.
3. Cook on medium low fire, approximately 3-4 minutes on each side, basting with pastry brush frequently.
4. To make mushroom sauce, heat butter on medium high heat. Add onion and saute for 2-3 minutes. Add mushrooms and saute for 1 minute. Add ramps and tomato and saute for 1 minute. Add white wine, reduce by half.
