Emma Borland's Pumpkin Cranberry Bread


3 cups all purpose flour
•1 tab. + 2 tsp. pumpkin pie spice
•2 tsp. soda
•1-1/2 tsp. salt
3 cups sugar
•1 (15 oz) can pumpkin
•4 eggs
•½ cup of orange juice
•1 cup vegetable oil

1 cup fresh whole cranberries or craisins
•1 cup pecans – chopped fine


Sift together:
Flour, Pumpkin Pie Spice, soda and salt

Beat together till mixed well:
•sugar, pumpkin, eggs, orange juice vegetable oil
Add to sifted ingredients •

Fold in:
cranberries or craisins and pecans.
Spray pans with cooking spray
Bake at 350º - 60 to 70 minutes – center rack
Makes 2 (9x5) loaves

Let cool 5 minutes – remove from pans – cool on racks
Bread can be baked in smaller loaf pans. Adjust baking time according to size.
