Low Carb Twice Baked Potato Casserole

Ingredients

  • 16 oz. Bag frozen cauliflower
  • 1 cup sour cream
  • 1 1/4 cup shredded cheese
  • 6 slices cooked bacon (chopped)

    Directions

    1. Cook cauliflower until almost done. Chop cauliflower and mix in the rest of the ingredients. Bake at 350 degrees for 1/2 hour.



    2. This recipe serves 5 and the carb count is 20 for the whole recipe.



    3. Some variations that are really good are adding sausage, ham, onions, garlic, butter or cream. Just don’t forget to adjust the carb count!



    4. Sprinkling a little bacon and cheese on top makes it look good too.
