Lemon Icebox Meringue Pie
1 can sweetened condensed milk
2 fresh lemons- squeezed (cut in half)
2 large eggs separated
Grated rind of 1 lemon
¼ teaspoon lemon extract
4 tablespoons sugar
¼ teaspoon salt
1 8-inch graham cracker pie shell
1.) Blend milk, lemon juice, egg yolks, grated lemon rind and lemon extract until mixture thickens.
2.) Pour into pie shell.
3.) Beat egg whites and salt until stiff.
4.) Add sugar.
5.) Cover pie with meringue and bake at 350 degrees until golden brown.
6.) Let cool before serving.
