Fresh Strawberries in Chocolate with Pastry Snowflakes
¼ cup packed brown sugar
2 tbsp. cocoa
¼ cup orange juice
¼ cup light corn syrup
½ tsp. vanilla
2 cups sifted all-purpose flour
1 tsp. salt
2/3 cup shortening
5-7 tbsp. cold water
In a 1-quart saucepan, heat the brown sugar, cocoa, orange juice and corn syrup to boiling over medium heat, stirring constantly. Remove from heat; stir in vanilla. Cover and refrigerate until ready to serve.
Sift flour and salt together. Add 1/3 cup of the shortening, cutting in until it resembles course meal. Add remaining shortening rubbing together with your fingers. Roll out on floured surface. Cut with cookies cutters. Sprinkle with coarse sugar. Bake at 400 degrees 5-8 minutes.
4 cups strawberries, sliced
To serve, spoon about 2 tablespoons sauce into a desert dish. Top each with desired amount of strawberries. Top with whipped cream. Garnish with small snowflake cookie and then serve with large snowflake cookies.
