Billy's Jambalaya


3 boneless skinless chicken breast, cubed
1 pound of smoked sausage, cut in 1/2 inch thick slices
1 green bell pepper, cleaned and cubed
1 red bell pepper, cleaned and cubed
1 yellow bell pepper, cleaned and cubed
1 yellow onion, minced
1 tomato, cubed
1 bulb of garlic, pealed and pressed
5 tablespoons of paprika
3 tablespoons of cayenne pepper (depending on how hot you want the dish)
3 tablespoons of Italian Seasoning
kosher salt and black pepper to taste
3 tablespoons of butter
1 tablespoon of tomato paste
2 cups of Chicken Stock
3 cups of cooked long grain rice


Before cooking, prepare all the meats and veggies. This will make sure there will be no burning during the cooking process. In a large dutch oven at medium high heat, add butter. Once butter is melted, add the chicken. Cook the chicken until the outside is white. Add seasonings, sausage, and veggies. Stir everything together. Stir frequently til juices start to rise above the mixture. Taste the liquid and add more seasonings to taste. Add chicken stock and tomato paste. Stir together and bring to a boil. Reduce heat and simmer until Jambalaya is the right consistency!
