Cricket's Pork Chop Dressing


4 pork chops
2 cans Cream style corn
1/2 c diced onion
1/2 c diced celery
3 Tbl olive oil
2 boiled eggs/ sliced
salt and pepper to taste


Broil pork chops about 6 minutes on each side. While pork chops are broiling, sauté' onion and celery in oil until tender. If dry, add a little more oil. Remove pork chops and reserve the drippings.

Mix corn, onion, celery eggs and pork chop drippings. Stir well and season with salt & pepper. Spray casserole dish with cooking spray and line bottom with pork chops. Pour corn mixture over pork chops and cook on 350 for about 30 minutes, until lightly brown and bubbly. Serves 4
Enjoy with your favorite vegetable and roll.
