Annie Dent's Patriotic Cake


2 1/2 cups plain flout
1 cup buttermilk
1 1/2 cups sugar
1 1/2 cups vegetable oil
2 eggs
1 tsp. baking soda
1 tsp. salt
1 tsp. vanilla
1 tbsp red food coloring
1 tbsp blue food coloring
2 lbs powdered sugar
1 stick margarine
1 8-oz cream cheese


Preheat over to 350 degrees
Cream sugar, vegetable oil and add eggs. Beat well.
Sift together flour, salt and baking soda. Add flour and milk alternately. Add vanilla. Beat until well blended. Divide the batter into two bowls. In one bowl add the blue food coloring. In the other bowl add the red food coloring.

Bake in layers for 15 to 20 minutes or until layers are firm. Insert toothpick to test for readiness of cake.

Frost with the following: beat one stick of margarine and soften cream cheese in mixer. Sift powdered sugar and add to margarine mixture slowly. Add milk if needed for spreading consistency. Decorate with fruit of your choice.
