Mussels with White Wine Sauce

Ingredients

  • 1 shallot (onion) diced
  • Chopped parsley
  • 1 cup white wine
  • 2 lb. cleaned mussels
  • Garlic bread

    Directions

    This dish is a wonderful appetizer or as part of a light lunch or supper.



    1. Put the shallot, wine, and cleaned mussels in a pan. Put the pan on a high heat and cover with a tight fitting lid.



    2. Cook for approximately five minutes or until the mussels have opened. Discard any mussels that do not open.



    3. Pour the mussels and cooking liquor onto a serving dish. Sprinkle with parsley.



    4. Serve with hot garlic bread, using the bread to mop up the juices from the mussels.



    5. Serve with white wine.
