2 cups all-purpose flour
3 cups orange juice
1 cup sugar
1 tbsp. orange peel
1 ½ tsp. baking powder
1 ½ cups fresh or frozen cranberries
1 tsp. salt
½ tsp. baking soda
¼ cup cold butter
½ cup chopped nuts
In a bowl, combine flour, sugar, baking powder, salt and baking soda.
Add butter and beat.
Add egg, orange juice and peel.
Beat just until dry ingredients are blended.
Add cranberries and nuts.
Spoon into a greased and floured 8-inch x 4 inch x 2” loaf pan. Bake at 350 degrees for 65 minutes.
Let cool for ten minutes before removing from pan.
