Cranberry Nut Bread

Ingredients

  • 2 cups all-purpose flour
  • 3 cups orange juice
  • 1 cup sugar
  • 1 tbsp. orange peel
  • 1 ½ tsp. baking powder
  • 1 ½ cups fresh or frozen cranberries
  • 1 tsp. salt
  • ½ tsp. baking soda
  • ¼ cup cold butter
  • 1 egg
  • ½ cup chopped nuts

    Directions

  • In a bowl, combine flour, sugar, baking powder, salt and baking soda.
  • Add butter and beat.
  • Add egg, orange juice and peel.
  • Beat just until dry ingredients are blended.
  • Add cranberries and nuts.
  • Spoon into a greased and floured 8-inch x 4 inch x 2” loaf pan.
  • Bake at 350 degrees for 65 minutes.
  • Let cool for ten minutes before removing from pan.
