Louisiana Gumbo
A gumbo for all seasons.
Ingredients
1 1/4 lbs. fresh chicken, diced
1 cup butter or oil
1 cup flour
2 large onions, chopped
6 ribs celery, chopped
2 large green peppers, chopped
1 Tbsp. minced garlic
2 qt. chicken stock
1 lb. smoked turkey sausage, sliced
1 lb. slicd okra (frozen is OK)
3 cups cooked rice
File' powder
Hot red pepper sauce
Seasoning: thyme, oregano, basil, bay leaves, red pepper, and kosher salt to taste
Directions
1. Saute chicken pieces in 1/2 cup of butter or oil until brown.
2. Add remainder of butter or oil and flour and make a medium brown roux, stirring constantly, approximately 20 minutes.
3. Add celery, onions, peppers, garlic, and seasonings. Cook until glazed. Slowly add chicken stock and sliced turkey.
4. Saute' okra in a separate pan; add to gumbo and cook for one hour.
