Penne Pasta with Roasted Chicken & Vegetables

Ingredients

  • 6 oz. chicken breast
  • 1 tsp. garlic
  • 1/4 cup sliced red onion
  • 1 zucchini, julienned
  • 1 squash, julienned
  • 1/4 cup sundried tomato
  • Fresh baby spinach
  • 4 oz. pasta (penne)
  • Scallions and parsley for garnish

    Directions

    1. Precook chicken to desired doneness.



    2. Sautee garlic, onion, zucchini, and squash until translucent.



    3. Add sundried tomato, pasta, spinach.



    4. Once heated, add chicken and season with scallions or parsley and salt, pepper and butter.
