Tamale Pie


2 T butter
½ cup chopped onion
1/3 cup chopped bell pepper
1 can red kidney beans
1 small can tomato sauce
2 t chili powder
½ t oregano
½ t cumin
1 cup cornmeal
2 t sugar
½ t salt
½ t black pepper
1 egg
½ cup milk
2 T butter
1 (10) ounce package frozen corn
½ cup grated cheese


In skillet melt butter. Add onions and green pepper and sauté 10 minutes. Stir in beans, tomato sauce, chili powder, oregano and cumin. In bowl combine cornmeal, sugar, salt, pepper. Stir in egg, milk, and butter. Stir in corn. Press cornmeal mixture into oiled pie dish. Spoon bean mixture into piecrust. Bake 20 minutes on 350 degrees. Remove and sprinkle cheese on top. Serve warm. This dish makes a complete protein, all without meat. Of course, 1 cup of chicken or ½ pound hamburger meat could be added. For heart health, reduced fat butter, cheese, and 2 egg whites could be substituted.
