Simple Salads by Miss Kitty

Ingredients

  • Ambrosia
  • 1 cup- well drained Mandarin oranges
  • 1 ½ cup – miniature marshmallows
  • 1 cup well drained pineapple chunks
  • 1 cup sour cream
  • ½ cup – flaked coconut
  • 1 cup pecans, coarsely chopped

    Directions

    Mix all ingredients together. Cover and chill about 1 hour. Serve as is or on pineapple rings or in lettuce cups.

    Potato Salad Stuffed Tomatoes

    4-6 medium size tomatoes

    2-3 cups potato salad

    Cut top off tomatoes and scoop out insides. Drain hollowed out tomato shells on paper towel. Fill shell with potato salad.

    Garnish with chopped green onion---crumbled fried bacon, chopped boiled egg, pimento or parsley.

    Salads may be served on cucumber halves. Use a large, long, straight cucumber. Cut in half. Slice halves into 2 pieces and scoop out pulp. Dry cucumber shells and serve potato, chicken, or shrimp salad on shells. Garnish.
