Gulf Garden Salad

Ingredients

  • 1 pound Florida shrimp, cooked, peeled and deveined
  • 2 cups Cavatelli pasta, cooked and chilled
  • 1 cup Florida celery, chopped
  • 1-cup Florida green pepper, chopped
  • 1-cup Florida red pepper, chopped
  • 1-cup Florida Green onions, chopped
  • 1-cup Red onion, diced
  • ½-cup Florida Broccoli floweret's
  • 1 cup Florida grape or cherry tomatoes
  • 1-cup Black olives, sliced
  • 1-cup White vinegar
  • 1/3-cup Olive oil
  • 2 tablespoons Limejuice
  • 2 tablespoons Parmesan cheese, grated
  • 1-cup Basil, fresh, chopped

    Directions

    1. Combine all ingredients except cheese and basil; chill for at least one
    hour.



    2. Add cheese and chopped basil. Serve with fresh, sliced tomatoes.



    *Note: May substitute 1 cup prepared Italian dressing for oil and vinegar.



    Yield: 4 servings
