Shrimp Salad Stuffed Tomato

Ingredients

  • 4 extra large tomatoes, partially sectioned in eights
  • 2 1/2 cups cooked bay shrimp
  • 1/2 cups mayonnaise
  • 1/4 cup sour cream
  • 2/3 cup thinly sliced de-seeded, peeled cucumber
  • 1 hard boiled egg, chopped
  • 1 Tbsp. chopped chiles
  • 1 Tbsp. minced parsley
  • 1/8 cup chopped green onion
  • 1 tsp. tarragon
  • 1 tsp. fresh lemon juice
  • Salt and pepper to taste

    Directions

    1. In a large bowl, mix all ingredients together, except tomatoes. Cover mixture and chill for 1 hour.



    2. Spread tomatoes open like a flower on serving plates. Drizzle a little olive oil over tomato flesh. Sprinkle tomatoes with salt and pepper.



    3. Mound shrimp salad inside tomato being careful not to tear tomato apart.



    4. Top with chopped chives.



    Yield: 4 servings
