Vegetable Rice

Ingredients

Rice



  • 3 cups water
  • 1 cup uncooked rice
  • Salt, pepper and seasoning to taste



    Vegatables


  • ½ cup oil
  • ½ cup carrots
  • ½ cup celery
  • ½ cup squash
  • ½ cup onion
  • ½ cup sweet peas
  • ½ cup broccoli
  • 1 bell pepper
  • 3 Tablespoons onion soup mix
  • Salt and pepper to taste
  • ½ cup water (if needed)

    Directions

    Preheat oven to 450 degrees. Mix 3 cups water, 1 cup uncooked rice
    Salt, pepper and seasoning together in large casserole dish. Bake 20-25 minutes until rice is separate and fluffy.



    Place all vegetables, onion soup mix, salt, pepper and oil in large skillet and cook until vegetables are just beginning to get tender.



    Fold rice into vegetables. Add up to ½ cup hot water if need for mixing so that dish will not be dry
