Irish Soda Bread

Ingredients

  • 6 cups all-purpose flour

  • 2 teaspoons baking soda

  • 2 teaspoons baking powder

  • 3 tablespoons cornstarch

  • 2 teaspoons sugar

  • 1 teaspoon salt

  • 2 1/2 cups buttermilk



Directions

Preheat oven to 375. Add all of the dry ingredients in large bowl and mix well. Pour all buttermilk into bowl at once and stir until a soft dough is formed. Do not try to make it smooth. Pour contents of bowl out onto counter and knead for a minute or so until everything comes together. Divide dough into 2 portions and shape each into a round loaf. Flatten top slightly. Place loaves on a large ungreased baking sheet, non-stick preferred. Sprinkle with additional flour on top of each loaf. With a sharp knife, make a cross on top of each. Let loaves rest for 10 minutes and then bake for 40 minutes until loaves are golden brown. Cool.
