Funny Girl’s Five Cheese Lasagna


1# Lasagna noodles
2# Cottage cheese
1# Ricotta cheese
½ c. Pecorino Romano cheese-grated
2 eggs
Parsley, salt & pepper
1 c. fresh sliced mushrooms
4 c. Baby spinach
1T. olive oil
3T white wine
5 c. grated Mozzarella cheese
Parmigiano Reggiano cheese


Boil and drain noodles, set aside. Combine the next five ingredients and set aside. Heat oil in skillet and sauté mushrooms. Add spinach and allow to wilt. Add wine and let it reduce for 2 to 3 minutes. Let spinach cool and add to cheese mixture. Spray a lasagna pan with cooking spray and begin layering starting with a little of the filling on the bottom of the pan. Follow with noodles, 1/3 of filling, 1/3 of shredded mozzarella until gone. Grate fresh Parmigiano Reggiano over the top layer. Place into 350 degree oven until bubbly and golden. Allow 15 minutes before cutting and serving.
