Annie Dent's Green Velvet Cake

Ingredients

2 cups sugar
1 1/2 cups vegetable oil
2 eggs
2 1/2 cups all-purpose flour
1 tsp. salt
1 tsp. baking soda
2 tsp. cocoa powder
1/2 (1-oz.) bottle green food coloring
1 tsp. white vinegar
1 cup buttermilk
1 tsp. vanilla
Frosting:
1-8 oz. cream cheese
1/2 cup butter
1 -16 oz box confectioners sugar

Directions

Preheat oven to 350 degrees, In a large mixing bowl beat sugar and oil together, add eggs and beat well. In another bowl sift flour, salt and baking soda together. In another small bowl mix cocoa powder, vinegar and green food coloring. Add this mixture to the sugar mixture. Last add flour and buttermilk. Mix well after each addition. Add vanilla and beat well.
Frosting:
Beat cream cheese and butter, add sugar, pecans, and vanilla. Beat until fluffy. Spread frosting between layers and on top and side of cake.
