1 dozen hard boiled eggs
4 cups milk
½ cup butter
½ cup flour
Salt and pepper to taste
One loaf of bread
Make a Roux (Melt butter and add the flour over low heat, getting the lumps out.
Slowly add milk stirring continuously. Take off burner and move to the back.
Peel the boiled eggs and separate the yolks from the white.
Chop the whites of the eggs and add them to the white gravy with salt and pepper to taste.
At this point go ahead and toast your bread and then tear into bite size pieces onto 8 plates.
In a separate bowl break apart the yolks using a fork.
Add a pinch of salt to the yolks, and use the tip of the fork to grate them til they resemble pollen (yes from a flower) but you shouldn’t need any Benadryl.
Check your egg white gravy and warm it if necessary, then pour over the toast.
Sprinkle the yolk mixture over the top and serve.
