Louise Child's Fruit Cake Cookies


1 cup butter
1 cup light brown sugar
1 tablespoon soda
3 tablespoons buttermilk
4 eggs, separated
1 teaspoon cinnamon
1 teaspoon nutmeg
6 cups pecans
1/2 pound candied pineapple
1 (8 ounce) package dates
1 pound candied cherries
3 cups all-purpose flour


Preheat oven to 300@d. Grease two cookie sheets. Dissolve soda in buttermilk and set aside. Combine 1 cup flour with pineapple, dates and cherries. Coat fruit well and set aside. Combine 2 cups flour with cinnamon and nutmeg and set aside. Cream butter, sugar and egg yolks together. Add buttermilk mixture and flour-spice mixture, stirring to blend. Stir in the fruit-flour mixture. Add pecans and stir to mix. Beat egg whites until stiff and add to mixture. Drop by teaspoonfuls onto prepared cookie sheet and bake for 20 minutes or until lightly browned. Frost with Wonder Frosting.
