Dianne's Caramel Cake


1 cup milk
3 cups flour
1 tsp. baking powder
1/2 tsp. salt
2 2/3 cups sugar
1 cup Crisco
1 stick butter, soft
2 tsp. vanilla flavoring
6 eggs
1 stick butter
2 1/2 cups sugar and 1/2 cups sugar
1 small can evaporated milk


Mix all ingredients except vanilla flavoring and eggs. Beat well on high speed of mixer. Add eggs one at a time and beat well after each addition. Add vanilla flavoring.
Bake in floured 9 inch round pan (Pam sprayed) 20 minutes at 400 degrees.
In a large (heavy) saucepan. Bring butter, 2 1/2 cups sugar and evaporated milk to a boil. Stir regularly. Meanwhile caramelize 1/2 cup sugar in heavy skillet. Pour slowly into boiling mixture. continue to cook for 3 minutes.
Remove from heat - cool beat until creamy and ready to spread.
