Strawberry Roll



4 eggs (best cold)
1 tsp. vanilla
1 cup sifted all-purpose flour
3/4 tsp. baking powder
14 tsp. salt
Powdered sugar
1 1/2 cups whipping cream (whipped and sweetened)
2 cups strawberries, sliced, drain or chopped by hand sweetened


Beat eggs and vanilla until thick and lemon colored. Gradually beat in sugar. Gradually beat in sugar and continue to beat until fluffy thick. Sift together- flour, baking powder, salt: fold into eggs.
Spray a 15" x 10"x 1" jelly roll pan with cooking spray. Line pan with wax paper and spray well with cooking spray. Pour mixture into pan and bake at 375 degrees for 10 minutes or until lightly browned. DO NOT OVER BAKE.
Turn out onto a kitchen towel that has been covered with XXX sugar. At narrow end roll up with towel and let cool completely on rack.
Unroll & spread with whipped cream. Sprinkle with strawberries. Re roll and transfer to serving platter. Garnish with more whipped cream dollops and strawberry slices if desired. Refrigerate.
