Pumpkin Roll

Ingredients

  • 3 eggs
  • 2 cup sugar
  • 2/3 cup canned pumpkin
  • 1 tsp. lemon juice
  • 3/4 cup all-purpose flour
  • 1 tsp. baking powder
  • 2 tsp. pumpkin pie spice
  • 1 cup chopped nuts
  • confectioners sugar
  • 8 oz. pkg. cream cheese
  • 1/4 cup butter
  • cup confectioners sugar
  • 1 tsp. vanilla

    Directions

    1.) Pre-heat oven to 375 degrees
    2.) Beat egg and sugar.
    3.) Fold in pumpkin and lemon juice.
    4.) Fold in flour, baking powder and pumpkin spice.
    5.) Pour into 10 x 15 inch well greased pan.
    6.) Bake 15 minutes.
    7.) Quickly loosen sides with knife and turn onto thin towel sprinkled with confectioner sugar.
    8.) Roll towel up and let cool.
    9.) Unroll and spread with filling.
    10.) Roll again and chill.
    11.) Slice and serve.
    12.) Filling 1 8 oz. Cream cheese, 1/4 cup butter, 1 cup confectioners sugar, 1 tsp. Vanilla. Cream together.
