Funny Girl’s Coconut Pie

Ingredients

2 c. sugar
1T. cornstarch
2c. half & half
3 egg yolks
1 T. butter
1 t. coconut extract
1 c. shredded coconut
Pie shell, uncooked
Meringue

Directions

Mix dry ingredients first, then add wet ingredients and beaten egg yolks. Cook over medium-low heath until mixture becomes a thick custard. Whisk constantly, don’t leave unattended. Remove from heat and add butter, extract and coconut. Pour into unbaked pie shell. Cook for 15 minutes in 350 degree oven. Add meringue topping with shredded coconut and brown until golden.

* For meringue, whip six room temperature egg whites with ¼ c. sugar and a dash of cream of tartar until reaches stiff peaks.
