Funny Girl’s Shrimp and Grits


1 T. Butter
1 T. Oil
½ c. Sliced scallions
½ c. Chopped fresh mushrooms
2 t. Cajun seasoning
White wine
Fresh, peeled/deveined Shrimp


Sauté scallions and mushrooms in hot butter and oil. Add seasoning and sauté until tender. Reduce in white wine. Add shrimp and toss, cooking no more than 3 minutes. Pour over hot and creamy grits.
