6-8 pieces chicken, cooked and de-boned
Salt and pepper to taste
1 can cream of mushroom soup
1 can cream of chicken soup
1 cup sour cream
1 can sliced water chestnuts, drained
1/2 cup frozen green peas (optional)
1 small onion, chopped
Chicken broth (if needed)
3-4 cups crushed crackers (club or escort)
2-4 tbsp. Oleo melted
1.) Mix first 8 ingredients in large mixing bowl.
2.) If mixture is too dry, add chicken broth.
3.) Mix melted oleo and crushed crackers together.
4.) Place layers of crackers on bottom of casserole dish.
5.) Put chicken mixture on top of crackers and sprinkle remaining crackers on top of chicken.
6.) Bake about 30 minutes at 350 degrees until lightly browned.
