David Ethridge's Vidalia Onion Casserole


3 large Vidalia onions
1 stick Oleo
1/2 cup milk
1 can mushroom soup
2 eggs, beaten
1 stack Ritz Crackers, crushed
1 cup cheese, grated


Chop and saute onions in oleo. Combine milk, soup and eggs. Spray a two quart casserole dish, then make a layer crushed crackers, onion and soup mixture.
Repeat to create second layer. Bake at 350 degrees until bubbly. Top with grated cheese.
