1 pound of Sausage
1 cup of Okra
1 cup of Trinity (Onion. Celery, Green Pepper)
2 cloves of crushed Garlic
1/2 cup Chicken Broth
1 can of stewed Tomatoes (chopped)
1 small can of Tomato sauce
(Option: 1 cup Chicken, 1 cup Crawfish)
1 TBSP of Peanut Oil
Warm Peanut Oil in a large skillet and saute'' Trinity until translucent. Add sliced sausage (and chicken) to Trinity and simmer for 5 minutes. Add okra and simmer until soft.
Serve over rice, in a loaf of crusty bread or in a Pita.
