The gates to this festival just opened, but the smell of BBQ is already in the air.
BBQ teams have driven in from all over the state to see if they will take home the award for best BBQ.

Dozens of RV's line the streets, waiting to get started on their top secret recopies for tonight’s tri-state BBQ competition.
And for first time competitors like Joshua Manning, they hope their recipe will be good enough to take home the prize.

“We’ve been doing it for tale gates and things like that so we just wanted to experience the professional side of it.” Competitor Joshua Manning said.

Manning and many other competitors are keeping their recipes secret.
But when asked why their food was going to win?

“Why not? We can do it.” Competitor Paul Norton said.

“We smoke with 100 pecan and really bring some quality meat in and get a good product out of it.” Manning said.

“I think it’s the rub and sauce combination.” Norton said.

“The secrets in the meat and the wood.” Manning said.

But officials say there is much more to do than just eat BBQ.

“We have entertainment all night on the stage. We've got the BBQ bash it’s a yard party.” Tri-state BBQ Coordinator Kerry Farrell said.

“It’s a fun place to hang out good way to spend the weekend.” Manning said.
