Groundbreaking dry yeast plant opens in Headland

DOTHAN, Al (WTVY) - Tuesday morning was a major milestone for the yeast company 'Lesaffre' as they celebrate the businesses first yeast drying facility in the United States in Headland.

"It's a very good area for such a plant. We like to be in the country side,” said CEO of Lesaffre, Antoine Baule.

Baule flew in from France for the groundbreaking ceremony. Originating 160 years ago, his company has developed 55 production sites around the world, one of them here in the Wiregrass.

The existing plant on highway 431 north produces liquid yeast for industrial baking companies in the southeast. Now, they've opened a second drying yeast plant for other purposes.

"I’m very excited about this facility,” explained Baule. “It gives the plant a lot of flexibility and I’m hoping we will attract customers here."

The new plant dries the yeast down to almost no moisture to preserve its freshness and shelf life. The plant's production line is designed to put out 6 cases of dry yeast per minute.

"These are all specialty yeasts and they're all new products for Dothan,” explained plant manager Dennis Barry. “It's exciting on the existing yeast plant side and it's exciting on the dryer side as well."

The building has provided about 20 new jobs in the area.
